If you asked me a few years ago that I would eat Quinoa and Kale for breakfast, I would be laughing on your face. For so long, I don’t like Kale. It called me “quin-oh-a” when it was really “keen-wah”. A part of me always thought it was an elegant personal cereal, what a mistake I was. You can now add a quinoa bag per pound. It is extremely versatile, you can use it in cooking, soups, salads or basic particles instead of rice.

This breakfast will take some time to prepare. But you can cook quinoa prematurely and keep it in the fridge. Just warm it up when you need it. Everything else does not last long, which is great. All the balance in the cup is a great way to start the day. Packed iron, calcium, good carbohydrates, protein, vitamins. You really have it all! This should be my favorite vegetarian breakfast.
